Finally Did It! Shhh...


For those of you who have heard me complaining that we can't grill, you may be ecstatic. To the rest of you, hang with me. We live in a 2nd floor apartment. I have been trying to talk The Mr. into having a little grill. My secretive ploy to convince him required me pointing out every grill I saw on other porches. Let's just say he didn't love that approach. Finally, I let it go. (Me, let something go? Surprise!)


I came home the other day to a little Weber grill sitting on the floor. Was this really happening? Yes! I think The Mr. made the purchase due to the fact he was going on a road trip that would require such things. It didn't matter the reason, I was stoked! 


(Please don't laugh at our ridiculously crowded porch.)


My time has come! Boring dinners, no more! Great meat, can't wait!


So, to let you all know, we're being super safe and keep an eye on it at all times. Oh by the way....this isn't recommended. Shhh!


With that being said, here's my favorite grill recipe on the line-up for this week.



Bacon Wrapped Chicken Kabobs
¼ soy sauce
¼ cider vinegar
2 T. honey
2 T. canola oil
10 large mushroom cut in half
2 green onions minced
3 skinless boneless chicken halves cut into chunks
½ lb thick cut bacon, cut in half
1 8oz can of pineapple chunks

Mix soy sauce, vinegar, honey, canola oil, and green onions together. Place mushroom and chicken into the mixture and stir to coat. Cover and marinate in fridge for at least one hour. Preheat grill. Wrap chicken chunks with bacon and spread onto skewers. Alternate with pineapple, mushrooms, chicken. Lightly oil grill grate. Cook 15-20 min. Brush occasionally with sauce. Done when bacon is crisp chicken runs clear.
